Tiki Bar Throwbacks
There’s certainly a cocktail movement happening with fresh ingredients, homemade mixers and premium liquors showing up in flavourfully crafted libations of all kinds. We love a great trend, especially the liquid varietal, but in our case we’ve got more than a team of great mixologists on our side…we’ve also got the ultimate patio experience.
Which is why our Bar & Wine Director Mike Wilkins is embracing the Seawall life with crafty new patio drinks that bring elegance to the mediocrity of classic blender concoctions, while matching the relaxed vibe at LIFT.
We’re talking tiki bar throwbacks like our new rendition of the “Blue Hawaiian” which we call the “Purple Haze” for a reason.
Made with white rum, Cointreau, Blue Curacao, pineapple juice, grapefruit juice, grapefruit bitters, a touch of grenadine, shaved ice and of course, an umbrella…the fun part about this drink is when you stir it, the colours create a purple haze.
And the flavour? Mmmmm…come taste for yourself.
In the meantime, shake and stir your way to cocktail stardom at home with this fun spin on a classic:
1 oz Pisco Capel (Chilean liquor available in most liquor stores)
1 oz Limoncello
2 oz lemon juice
1/2 sprig rosemary (remove inner stem)
1 oz simple syrup or a sugar cube
fresh lemon wedge
- Fill martini shaker three-quarters full of ice.
- Shake all ingredients until shaker becomes frosted.
- Strain into Collins cocktail glass over fresh ice; then top with soda.
- Garnish with lemon wedge.
It’s that time. The sun shines and we start to feel the twitch and lure of our favourite outdoor decks. We come by it honestly. Vancouver and outdoor patio-time just go together. It’s what we westcoasters do to kick back, look around and toast to how incredibly lucky we are to live in this breathtaking corner of the world.
Not to brag, but at LIFT you can take your pick of decks. Our rooftop deck opens soon complete with non-stop views and a cozy outdoor fireplace, but right now, if the sun or stars are out and that familiar outdoor deck urge sets in, head to our lower Seawall deck for a vantage point so waterfront, it’s actually over the ocean.
Our Seawall deck is also a popular spot for an afternoon office cocktail party, and in fact is available for exactly that. [more on party planning]
The blessed day of all-things-mom is coming up fast, but rather than a last-minute scramble, do what she would expect from her favourite child and reserve for Mother’s Day brunch or dinner now.
Sunday, May 12th between 11am and 3pm, choose from a selection of seaside Brunch favourites like our Coal Harbour Breakfast, Pacific Omelette, and signature Eggs Benedict including one with short ribs that’s so uniquely delicious it has it’s own #hashtag. Kids are covered too with child size menu items like single eggs benny and Fish & Chips.
At 5pm, the Dinner Menu starts with a mouth-watering array of starters, mains and sushi. Count on a fresh fish feature, lots of mom love and an oceanfront vantage point like no other.
